Dutch: Een korrel graan bestaat uit de volgende onderdelen:
Kaf - het oneetbare omhulsel waar de graankorrel - tijdens de groei aan de aar - in 'verpakt' is.
De zemel - het velletje dat om de graankorrel zit noemen we de zemel. De zemel is opgebouwd uit meerdere, met elkaar vergroeide lagen en bestaat voor het grootste deel uit vezelstof. Bij rijst wordt de zemel het
zilvervlies genoemd.
In de zemel zit het meellichaam (endosperm).Het meellichaam bestaat uit
zetmeel (het grootste deel) en eiwit, afhankelijk van de graansoort kan een deel van de eiwitten die in (en rondom) het meellichaam zitten, uit stoffen
bestaan die tijdens het kneden van deeg gluten vormen.
Gluten zijn nodig om deeg met gist - o.a. brooddeeg - te laten rijzen (ze houden het gas vast dat door de gist geproduceerd wordt).
In het meellichaam zit de kiem. De kiem is het deel van de korrel van waaruit

Appendix 2: Action plan of making the week planning
1a First the planner calls with the sales department, how much bulk will be delivered
from Thursday until Sunday? This gives the planner an idea about the available stock capacity and what can be produced.
1b Then the planner counts the bulk inventory of flour. A calculator is used and the daily
report of the bulk inventory per cell per product.

2 First Mill 2 has been planned in total. Only on this mill can be processed rye and

3 Then there is printed a list of all the customer orders for next month from Heart Profit.

4 Then the turnover can be divided by Laco Crumbs, Dr. Oetker and remaining. This can
be added to the Excel sheet. Dr. Oetker does packaging for Koopmans, so it is important that this company has enough flour delivered on time. Some flour types can be purchased.
5 Now the planner looks at the inventory lists of the bags in the warehouse. There are
placed notes of exclamation (!) to see quickly what needs to be produced and packed in bags.
6 The total planning of production per week is printed then.
7 After the total planning has been made, the sequence of products should be determined
for mill 2 and mill 1. What should be made at which time moment? This is called planning in advance.
8 In the weekly meeting sales and quality persons talk with the planner about the details.
This can have influence on the sequence of production.
9 If the meeting is over, the planning for the mill is finished. This planning is used for
planning per day and as source of information for other departments their planning.
